    Preheat the oven to 400°F. Grease a large baking dish with 1 tablespoon of the olive oil.

    In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 10 minutes.
