Preheat the oven to 400°F. Grease a large baking dish with 1 tablespoon of the olive oil.
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 10 minutes.
Arrange the salmon fillets in the prepared baking dish. Top each fillet with the caramelized onions, followed by the halved cherry tomatoes.
Sprinkle the shredded mozzarella cheese over the top of the dish.
Bake the Tuscan Salmon Bake in the preheated oven for 15-18 minutes, or until the salmon is cooked through and the cheese is melted and bubbly.
Remove the dish from the oven and drizzle the top with the remaining 1 tablespoon of extra virgin olive oil. Serve hot.
