In a separate pot, bring 4 cups of water to a boil. Add the ramen noodles and cook according to package instructions, about 2-3 minutes. Drain and set aside.
In a large skillet or wok, heat 1 tbsp of oil over medium-high heat. Add the thinly sliced beef and cook for 3-4 minutes, stirring occasionally, until browned and cooked through.
Add the soy sauce, tamarind paste, and 1 cup of water to the skillet with the beef. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to blend.
Divide the cooked ramen noodles among 4 serving bowls. Ladle the beef and broth mixture over the noodles, then top with the steamed broccoli florets. Sprinkle the sesame seeds over the top and garnish with the soft-boiled eggs.
