Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the sliced shallot and minced garlic, and cook for 1-2 minutes until fragrant.

Add the sliced Thai chilies and continue cooking for another 1-2 minutes, stirring frequently.

Push the aromatics to the side of the wok and add the lightly beaten eggs. Scramble the eggs for 1-2 minutes, then mix them into the aromatics.

Add the cooked and cooled jasmine rice to the wok and stir to combine. Pour in the fish sauce, soy sauce, and lime juice, and continue cooking for 2-3 minutes, stirring frequently, until the rice is heated through and the flavors are well combined.
