4 large bell peppers, tops cut and seeds removed
1 lb ground beef or turkey
1 cup cooked rice
1 onion, diced
2 cloves garlic, minced
1 can diced tomatoes, drained
1 cup corn kernels
1 cup shredded cheese
2 tbsp olive oil
1 tsp paprika
Salt and pepper to taste
1/4 cup water

Preheat oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat.

Cook onion until soft, add garlic and cook 1 minute more.

Add ground meat and cook until browned, breaking it up as it cooks.

Stir in cooked rice, diced tomatoes, corn, and seasonings.

Remove from heat and stir in half the cheese.

Stuff each pepper with the meat and rice mixture.

Place peppers in a baking dish with water in the bottom.
