Ingredients
Step-by-Step
In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the cubed chicken and cook for 5-7 minutes, or until the chicken is lightly browned.
Reduce the heat to medium, then add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.
Stir in the paprika, chili powder, and 1/4 cup of the milk. Bring the mixture to a simmer and cook for 2-3 minutes, allowing the flavors to blend.
Add the uncooked penne pasta, the remaining milk, and 1 cup of water to the skillet. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is tender.
Remove the lid, stir in the diced cucumber, yogurt, and shredded Gouda cheese. Cook for an additional 2-3 minutes, or until the cheese is melted and the sauce has thickened.
Remove the skillet from the heat and stir in the chopped herbs. Serve the spicy chicken and pasta skillet hot.
