Preheat your oven to 400°F (200°C). In a small baking dish, combine the minced garlic and olive oil. Roast the garlic for 8-10 minutes, or until fragrant and lightly golden brown.

While the garlic is roasting, prepare the popcorn. In a large pot with a tight-fitting lid, heat the popcorn kernels over medium heat. Once the kernels start popping, shake the pot continuously until the popping slows to about 2-3 seconds between pops.
