In a large pot, bring 6 cups of water to a boil over high heat. Add the ramen noodles and cook for 2-3 minutes until tender. Drain and set aside.
In the same pot, heat 1 tbsp of vegetable oil over medium-high heat. Add the sliced beef and cook for 3-4 minutes, stirring occasionally, until browned.
Add the chopped broccoli florets to the pot and cook for 2-3 minutes, until the broccoli is slightly tender.
Pour in the soy sauce and tamarind paste. Stir to combine and let the mixture simmer for 2-3 minutes.
Add the cooked ramen noodles back to the pot and toss everything together until well combined. Sprinkle the sesame seeds on top.
