In a large bowl, combine the sliced beef, diced tomatoes, and 1/4 cup of the beef broth. Marinate for 10 minutes, stirring occasionally.
Heat a large wok or skillet over high heat. Add 1 tablespoon of oil and the sliced onions. Stir-fry the onions until they start to caramelize, about 3-4 minutes.
Add the julienned carrots to the wok and continue to stir-fry for another 2-3 minutes, until the carrots are crisp-tender.
Add the marinated beef and tomatoes, along with the remaining 1/4 cup of beef broth. Stir-fry for 4-5 minutes, until the beef is cooked through and the sauce has thickened.
