In a large bowl, combine the sliced lamb, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Mix well and let marinate for 15 minutes.
Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the marinated lamb and cook for 5-7 minutes, stirring occasionally, until the lamb is cooked through and slightly browned.
Remove the cooked lamb from the skillet and set aside. In the same skillet, heat the remaining 1 tbsp of olive oil over medium-high heat. Add the sliced onions and bell peppers, and sauté for 5-7 minutes, until the vegetables are tender and slightly charred.
Add the cooked lamb back to the skillet with the sautéed vegetables. Stir to combine and heat through, about 2-3 minutes.
Serve the garlic lime lamb fajita mixture in warm flour tortillas, with any desired toppings such as diced tomatoes, shredded lettuce, sour cream, or guacamole.
