In a separate bowl, whisk the eggs together with the Parmesan cheese, salt, and black pepper until well combined.
Pour the egg mixture over the potatoes in the skillet, making sure to evenly distribute the potatoes. Sprinkle the shredded mozzarella cheese on top.
