In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chopped kimchi and stir-fry for 2-3 minutes until fragrant.
Add the julienned carrots and frozen peas to the skillet. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.
Push the vegetable mixture to the side of the skillet. Add the scrambled eggs to the empty side and cook, stirring occasionally, until the eggs are fully cooked, about 2 minutes.
Add the cooked rice, soy sauce, and sesame oil to the skillet. Stir everything together until well combined and the rice is heated through, about 2-3 minutes.
Stir in the sliced green onions and continue to cook for an additional 1-2 minutes, stirring occasionally, until the green onions are softened.
