In a medium bowl, combine the diced chicken, chopped broccoli, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

Lay a gyoza wrapper on a clean surface, placing about 1-2 tablespoons of the chicken and broccoli mixture in the center. Moisten the edges of the wrapper with water, then fold the wrapper in half and crimp the edges to seal the gyoza.

Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium-high heat. Working in batches, place the gyoza in the pan and cook for 2-3 minutes per side, or until the bottoms are golden brown and crispy.
