In a large bowl, gently mix the ground beef until just combined, being careful not to overwork it. Divide the mixture into 8 equal portions and shape them into small, thin patties.
Heat a large skillet or griddle over medium-high heat. Cook the beef patties for 2-3 minutes per side, or until they are cooked through and reach your desired level of doneness.
Place the cheese slices on top of the hot patties and let them melt, about 1 minute.
Place the split buns, cut-side up, on a baking sheet. Toast them in the preheated oven for 2-3 minutes, or until lightly golden brown.
