Step-by-Step
Cook egg noodles according to package directions. Drain and set aside.
Season beef strips with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Brown beef strips in batches, remove and set aside.
Add butter to the same pan, sauté mushrooms until golden.
Add onion and garlic, cook until softened.
Sprinkle flour over vegetables, cook for 1 minute.
Gradually add beef broth, stirring constantly.
Add mustard and paprika, return beef to pan.
Simmer for 10 minutes, then stir in sour cream.
Serve over noodles, garnished with parsley.
